A superior milk coagulant, Maxiren is a fermentation-derived product made using a selected strain of the dairy yeast Kluyveromyces lactis. This patented product, awarded GRAS status by the FDA,is pure chymosin identical to the chymosin enzyme present in calf rennet. Unlike calf rennet, however, Maxiren is 100% pure chymosin.
Maxiren provides maximum milk clotting activity. Strong curd formulation allows earlier cutting, when used in amounts equal to calf rennet. Compared to microbial rennet, the high cheese yield makes it more economical for every batch. Used commercially in Europe since 1988, Maxiren has proven extremely cost-effective. Because it is a fermentation-derived product, supply is always assured.
