Capalase® C HT-120 is a standardized natural flavor producing enzyme (triaclyglycerol lipase) that is derived from pregastric bovine (calf) tissue. This powdered enzyme is used for flavor development in Italian-type cheese and other foods. Capalase® C HT-120 does not contain animal tissue.
