Red and green chiles mix creates a beautiful, eye-catching medley of hot peppers for various food processing recipes for cheeses, meat, and premium sauces. Delivering a moderate heat with a hot-biting flavor, the blended 80/20 mixture is harvested from Mexico where hot chiles thrive in full sun exposure and warm conditions. Never cooked, the fresh and firm jalapenos create a bright array of red and green. Chiles range in color from dark to olive green and nicely complement the bright to dark red jalapenos. Peppers are chopped into 1/8" pieces for a polished, consistent appearance with uniform shapes throughout the blend. Packed in a combination of acid and salt to preserve integrity and color, jalapenos are color-sorted to eliminate undesired colors. The pepper ratio is approximately 80% green and 20% red with a scattering of creamy to white seeds. Specialty moist blend has a Scoville rating from 1000-5000. SQF Certified.
