Measuring water activity in samples like sauces, dressings, tobacco, spices, or teas has always been challenging. The reason for this difficulty is the presence of volatile compounds that interfere with sensors like chilled mirrors and capacitance.
However, experts in water activity have developed an instrument called the TDL (tunable laser diode) to address this issue. The TDL uses a laser sensor that accurately measures even the most challenging volatiles. It's easy to use and takes only a few minutes to measure any sample, including soy sauce, pure alcohol, gasoline, and tobacco.
