DelvoLac IT-7 Starter Culture Media is an internally buffered thermophilic starter medium. Designed to provide good bacteriophage protection and growing thermophilic starter cultures, DelvoLac IT-7 helps produce lactic acid bacteria for rapid acidification, cheese ripening, and improving protein digestability. Thermophilic cheese cultures are activated by high heat levels and are used in cheeses that cook at a higher temperature. Ideal for making a variety of cheese, including mozzarella, parmesan, romano, swiss, and other italian cheeses. White to light brown in color, the starter culture media helps the formation of cheese flavor and texture. The starter culture composition includes whey, starch, magnesium-phosphate buffer, non-fat dry milk, minerals, autolyzed yeast extract, and maltodextrin. Kosher and Halal Certified.
