Capalase KL Powdered Enzyme Protein is a standardized natural flavor-producing enzyme, or triacylglycerol lipase, for cheesemaking applications. Derived from caprine (goat) and ovine (lamb} tissues, this lipase preparation helps to release fatty acids from the fat globules in milk, where the fatty acids can be further metabolized to generate various volatile compounds. The enzyme protein provides a strong, definite flavor for Italian cheeses. Capalse KL offers a lingering peppery "peccorino" and sharp "piccante" flavor profile distinctive to Gorgonzala, Provolone, and most Italian-type cheeses. Capalase KL enzyme protein does not contain animal tissue.
