Capalase Micro MH Microbial Lipase is a standardized natural flavor-producing enzyme, or triacylglycerol lipase, for cheesemaking applications. As an essential enzyme for producing tasty and healthy cheese, Capalase Micro MH is more specific in its actions to break down proteins into more complex structures to produce higher quality, more unique, and flavorful cheese products. The powdered protein enzyme is derived from Mucor javanicus, a filamentous fungus known for producing high levels of proteases —enzymes that break down the caseins in milk.
