Lallemand LalCult Protect Peperoni HT-01 is a specialized culture designed for pepperoni production and a natural way to control undesirable flora.
This product features a carefully selected strain of Pediococcus acidilactici, a type of lactic acid bacteria (LAB) known for its role in food fermentation and inhibiting the growth of spoilage bacteria. It rapidly acidifies and reduces the pH level to around +45°C / +113°F, ensuring the flavor remains pleasantly mild without becoming overly acidic. It promotes excellent color formation and presentation during retail display. In addition, Lalcult Protect Peperoni HT-01 effectively reduces the risk of Listeria contamination on the surface of pepperoni.
