Dark Cocoa Powder is alkaline-treated cocoa that neutralizes the natural acidity of the cacoa beans after they have been roasted. Alkalizing cocoa makes for a darker, intense color and smooth, rich chocolate flavor with less citrus. Derived from the cacao plant, the beans are pressed with alkali into a smooth confection of a fine powder. Deep brown to black in color, bittersweet chocolate has a strong taste that evokes a hint of sugar and sweetness though mostly quite rich in cocao flavor.
