Made to be used sparingly, ghost peppers (also called "Bhut Jolokia" in the parts of India where they are cultivated) are among the hottest peppers in the world. Specifically bred to be potent and fiery, ghost peppers are also known as "poison pepper" with a heat index greater than 250,000 on the Scoville Heat Scale. Unlike most peppers, ghost peppers produce capsaicin throughout the fruit and not only in the skin around the seeds. After being dehydrated, the ghost peppers are formed into irregular sized flakes and granulates at 1 x 1 mm. Yellow hues radiate through among the reddish orange to bright red dried mixture for a pleasing appearance. Producing a pungent, hot chile aroma with fruity overtones, the dehydrated chiles are naturally gluten free. Incredibly hot and advised to be used with caution, the pepper spice is ideal for adding heat to curries, pickles, sauces, and chutneys as well as brines, tortilla chips, and candy. The intense heat of the ghost pepper makes it a popular ingredient in authentic recipes that combine pork or fish.
