Product Details
Capalase L Powdered Enzyme Protein is a standardized natural flavor-producing enzyme, or triacylglycerol lipase, for cheesemaking applications. Derived from pregastric ovine (lamb) tissues, these specialized lipase preparations contribute to flavor development by producing a very sharp, lingering "peccorino" profile that is typical of Italian-type cheeses. Ready-to-use enzyme protein is a fine, free-flowing beige powder that rebuilds protein strength during cheese production. Capalase L does not contain animal tissue.
