Ghost pepper (bhut jolokia) is a member of the Capsicum family and is among one of the hottest peppers in the world. Specifically bred to be potent and fiery, ghost peppers are also known as "poison pepper" with a heat index greater than 250,000 on the Scoville Heat Scale. Unlike most peppers, ghost peppers produce capsaicin throughout the fruit and not only in the skin around the seeds. After being dehydrated, the ghost peppers are formed into irregular sized flakes approximately 1/8" to 1/4" in size. Yellow hues radiate through among the reddish orange to bright red dried mixture for a pleasing appearance. Producing a pungent, hot chile aroma with fruity overtones, the dehydrated chiles are naturally gluten free.
