In a whole, crescent-shaped form, the highly-aromatic caraway seed is derived from Caraway, a herbaceous biennial plant known as Persian cumin or meridian funnel. Frequently used in baking, caraway seeds have a distinctively mild anise flavor that adds a subtle licorice hint with an earthy touch of citrus and pepper. Slightly bitter, caraway seed is common to German and Austrian cooking and pairs well with potatoes, cabbage, and carrots as well a sausages, duck, and goose. The long and curved brown shells have tapered ends and measure approximately 1/8" to 3/16" long. Caraway seed is light green in appearance with brown colored ridges. The licorice-flavored seeds are used in several liqueurs or as a topping to scones or breakfast pastries. Most famous for its presence in German rye bread, Caraway seed is an exceptionally old spice dating back to the Stone Age.
